Ingredients for the recipe for cheese and mustard croquettes in air fryer

  • Butter - 1.7 oz
  • Wheat flour - 2.5 oz
  • Milk - 500 ml
  • Goat cheese - 1.6 oz
  • Dijon mustard - 0.88 oz
  • 1 Egg
  • Breadcrumbs - 1.4 oz
  • Salt

Preparation in airfryer

Preparation time: 15 minutes

Rest time: 4 hours

Cooking time: 10 minutes

  1. In a skillet over medium heat, add the butter and wait for it to melt.
  2. Add 50 gr of wheat flour and stir until it becomes a well-integrated homogeneous mass.
  3. We add the milk little by little and with a manual silicone rod we stir it well
  4. When there are no lumps, add the chopped goat cheese and Dijon mustard.
  5. Stir for 10 minutes over low heat
  6. We remove the croquette dough from the heat and put it in a bowl or a source that we can cover with plastic wrap
  7. Let stand for at least 4 hours
  8. We take out the dough and form the croquettes (it can be with a machine, with two spoons or with the trick that we explain below in case you are in a hurry)
  9. We cook in the airfryer for 10 min at 200 ยบC
  10. We check that the croquettes are golden but well done inside

Tips for a good recipe for cheese and mustard croquettes in a airfryer

  • If you want a better texture in the croquettes, add only half of the milk and when everything is integrated (cheese, mustard...) add the rest
  • I recommend you stir with metal rods so that there are no lumps of flour
  • You do not need to chop the cheese, if you crumble it with your hand it will melt in the pan although I do recommend removing the skin that covers it
  • The plastic wrap should touch the croquette dough when you cover it so that a crust does not form
  • It should rest for at least a few hours but I leave it overnight
  • Add a little Olive oil spray when the cheese and mustard croquettes have cooked for a few minutes for an extra golden touch
