Cockles empanada recipe in airfryer

In my case, I used a large aluminum mold (I have measured it previously to see if it would fit in my airfryer).

Ingredients for the cockle pie recipe

  • 3 tbsp Olive oil
  • 1 onion
  • 1 red pepper
  • 1 tomato
  • 2 cans of cockles
  • 3 eggs
  • Green olives stuffed with anchovies - 6.3 oz
  • 1 large rectangular puff pastry
  • Salt

Preparation in airfryer

Preparation time: 26 minutes

Cooking time in the air fryer: 20 minutes

  1. Cook 2 eggs in a pot with water and salt for 12 minutes
  2. Heat a frying pan with a splash of oil.
  3. Peel, cut the onion julienne (into strips) and add it to the pan with a little salt
  4. Cut the red pepper into julienne strips and add it to the pan as well.
  5. Cook for 15 minutes until they are poached
  6. Cut the tomato into cubes and the olives into small pieces and add everything to the pan
  7. Now we are going to drain the cockles, and add their juice to the pan as well (not the cockles)
  8. Peel and chop the hard boiled eggs
  9. When everything is cooked, add the cockles and hard-boiled eggs to the pan for 2 minutes, stirring every so often
  10. Turn off the heat and let it cool down a bit while you prepare the dough.
  11. Remove the basket from the air fryer and place a suitable mold with baking paper, covering the base and part of the walls well.
  12. Place the dough on top of the mold letting it protrude and then add the filling
  13. Carefully close the protruding dough above the filling
  14. We beat the missing egg and used it to paint the outside of the puff pastry
  15. We cook during 20 minutes at 180 ยบC in the airfryer
  16. And we already have our cockles empanada recipe ready!

Tips for a good cockle pie recipe in a airfryer

  • It is important that when you drain the cockles, pour the juice released from the can into the pan to give more flavorr
  • I recommend you use a natural tomato for the sauce and that it is ripe to cook it better
  • The amount of ingredients is balanced and to taste but if you want to enhance the flavor of something, you just have to add more of that ingredient
  • In addition to the egg to paint the puff pastry you can put a little butter and sesame seeds
  • Remember to put a mold suitable for fryers without oil and that it fits inside the basket without any problem (my fryer is 5.5L)

Substitution of ingredients

  • Roasting red pepper โžก๏ธ Roasting or frying green pepper (or a combination of half a red pepper and half a green pepper)
  • Ripe natural tomato โžก๏ธ Crushed tomato s/a or fried tomato s/a
  • 2 cans of cockles โžก๏ธ 2 cans of tuna (although it would go from being a cockle empanada to a tuna empanada)
  • Puff pastry dough โžก๏ธ Special dough for empanadas or filo dough
  • Spices โžก๏ธ I only added salt to the sauce but you can add a little black pepper, garlic powder, oregano and basil
