Ingredients for the recipe for leek, date and carrot croquettes in air fryer

  • Carrots - 8.8 oz
  • 1 leek
  • 5 dates
  • Milk - 300 ml
  • Wheat flour - 1.7 oz
  • Olive oil
  • Salt
  • 1 tsp black pepper
  • 1 tsp Nutmeg
  • Bread crumbs - 2 oz (for breading)
  • 1 large egg (for breading)

Preparation in airfryer

Preparation time: 10 minutes

Repose: 4 hours

Cooking time: 10 minutes

  1. Peel and chop the carrots very fine
  2. In a frying pan with a little olive oil, sauté the carrots over medium heat.
  3. We cut the leek and the finite dates and add it
  4. Sauté with salt, black pepper and nutmeg
  5. When it has poached add the flour and remove about 2 minutes
  6. Add the milk and continue stirring until thickened.
  7. Add more salt if necessary
  8. Transfer the dough to a bowl, let cool, cover with film and to the fridge 4 hours minimum
  9. Over time we use the accessory to make croquettes or with our hands
  10. In a bowl beat an egg and on a flat plate put the breadcrumbs
  11. We pass each croquette first by egg and then by breadcrumbs
  12. We place them in the basket of the air fryer without piling them up and spray Olive oil on top
  13. We cook in the airfryer at 170 ºC for 10-12 minutes
  14. We repeat the process for all the croquettes (I got 18)

  • Carrots, leeks and dates are best passed through a food processor so that they are not noticeable when eating the croquette
  • The salt is added before the flour and milk but when everything is added you must rectify to your liking

  • Spraying Olive oil before cooking is optional but it will give it a golden touch
  • I usually get 18 or 20 large croquettes if you make them smaller the cooking time can vary
  • For the breading you can pass the croquettes through egg, breadcrumbs and repeat the process again for each croquette if you want it crunchier.

  • Semi-skimmed milk ➡️ Whole milk, lactose-free milk, skimmed milk, vegetable drinks...
  • Wheat flour ➡️ Whole wheat flour, almond flour...
  • Spices ➡️ You can add or substitute the ones you like the most
  • Breadcrumbs ➡️ Panko or crushed corn flakes without sugar
