Ingredients for the air fryer ratatouille recipe
2 small Aubergines
1 green Zucchini
2 purple Onions
Tomato sauce - 2.11 oz
1 tsp of Black pepper
1/2 tsp of Dried thyme
Preparation in airfryer
Preparation time: 5 minutes
Cooking time: 40 minutes
Wash the aubergines and cut them into thin slices (approximately half a centimeter)
Place the slices in a colander, add a handful of salt and leave for 30 minutes to release the bitter taste
Wash the zucchini, tomatoes and onions and cut into thin slices
Preheat the airfryer at 180 ºC for a few minutes
In a rectangular mold suitable for air fryer we put a tomato base with a spoon that covers everything well and a little sprinkled oregano
Place a slice of zucchini, a tomato, an aubergine and an onion and so on.
You have to give it a spiral shape
Season to taste, add the thyme and sprinkle a splash of Olive oil on top
We cook in the airfryer at 180 ºC for 40 minutes

Tips for a good fryer ratatouille recipe without oil
The aubergines have to be at least 30 minutes to remove the bitter taste but if you leave them for 1 or 2 hours better
Rinse the aubergines when the time has passed to drain off excess salt.
Tomato, zucchini and onion I like to cut them finer than eggplant
Help yourself with the walls of the mold to give it the spiral shape
If your mold is very large you can put a mini circular mold in the middle with an egg for the last 10 minutes
