Ingredients for the air fryer ratatouille recipe

  • 2 small Aubergines
  • 1 green Zucchini
  • 2 purple Onions
  • 3 Tomatoes
  • Tomato sauce - 2.11 oz
  • Olive oil
  • Salt
  • 1 tsp of Black pepper
  • 1/2 tsp of Dried thyme
  • Oregano

Preparation in airfryer

Preparation time: 5 minutes

Cooking time: 40 minutes

  1. Wash the aubergines and cut them into thin slices (approximately half a centimeter)
  2. Place the slices in a colander, add a handful of salt and leave for 30 minutes to release the bitter taste
  3. Wash the zucchini, tomatoes and onions and cut into thin slices
  4. Preheat the airfryer at 180 ยบC for a few minutes
  5. In a rectangular mold suitable for air fryer we put a tomato base with a spoon that covers everything well and a little sprinkled oregano
  6. Place a slice of zucchini, a tomato, an aubergine and an onion and so on.
  7. You have to give it a spiral shape
  8. Season to taste, add the thyme and sprinkle a splash of Olive oil on top
  9. We cook in the airfryer at 180 ยบC for 40 minutes
  10. We take out to check that the vegetables are soft (or to the point that we like them)

Tips for a good fryer ratatouille recipe without oil

  • The aubergines have to be at least 30 minutes to remove the bitter taste but if you leave them for 1 or 2 hours better
  • Rinse the aubergines when the time has passed to drain off excess salt.
  • Tomato, zucchini and onion I like to cut them finer than eggplant
  • Help yourself with the walls of the mold to give it the spiral shape
  • If your mold is very large you can put a mini circular mold in the middle with an egg for the last 10 minutes
  • Check how the ratatouille goes from time to time (if the vegetables brown soon, lower the temperature to 170 ยบC)
