Sicilian Arancini recipe in airfryer

Today at BiteMyRecipe we have prepared a recipe for Sicilian Arancini in an airfryer, very tasty and easy to cook for the whole family!

It consists of breading a risotto and creating crunchy outside and juicy inside balls.

The filling must be a risotto but it can be whatever you like, in my case mushrooms.

This recipe for Sicilian arancini in a fryer without oil is easy to prepare, generates many portions and is delicious

I have cooked everything in my 5.5L airfryer and a skillet

You do not need many utensils or appliances and you do not have to use a microwave, Thermomix or oven.

You can modify the ingredients to your liking and it has given me for about 15 units.

Ingredients for the Sicilian arancini recipe in airfryer

  • 1 onion
  • Rice for risotto - 7 oz
  • White wine - 50 ml
  • Mushrooms - 7 oz
  • Vegetable broth - 600 ml
  • 1 tbsp of Butter
  • Saffron
  • Grated Parmesan cheese- 2.11 oz
  • 18 fresh mozzarella balls
  • EVOO spray
  • Salt
  • Breadcrumbs - 3.5 oz
  • Wheat flour - 3.5 oz
  • 1 Egg

Preparation in airfryer

Preparation time: 4 minutes

Cooking time: 26 minutes

  1. In a deep skillet, heat the butter over medium heat.
  2. Peel and chop the onion into small cubes
  3. Sauté the onion and season
  4. Wash and chop the mushrooms into small cubes and add them
  5. Add the rice and stir before adding the wine
  6. On high heat we wait for all the alcohol to evaporate
  7. Add the very hot broth and two saffron threads
  8. Cook over medium heat while stirring constantly
  9. Add the cheese, let cool and rest (better if it is from one day to the next)
  10. We take small portions of risotto, round it, put a small ball of mozzarella inside and shape it into a pear (a ball with a peak on top).
  11. Preheat the fryer without oil to 200 ºC
  12. We beat an egg in a bowl, put flour in a plate and breadcrumbs in another plate
  13. Dip each ball in flour, beaten egg and breadcrumbs in that order
  14. Place baking paper for the air fryer with 10 balls on top (without piling up) and spray oil
  15. Cook in the fryer without oil at 200 ºC for 6 minutes
  16. We repeat the process for all the balls
  17. And we already have our recipe for Sicilian Aracini in a fryer without oil ready!

Tips for a good recipe for Sicilian Arancini in airfryer

  • If you have a food processor, it is better to pass the mushrooms and onion so that they are very fine.
  • It is better that the risotto is from one day to the next
  • You can make the mushroom risotto like me or however you like
  • Remember to bread following the order of flour, egg and breadcrumbs
  • The balls can be round, they don't have to have that shape.
  • Do not cook everything at once, it is better to do it in batches

  • Rice for risotto ➡️ Arborio or carnaroli rice
  • White wine ➡️ Brandy
  • Mushrooms ➡️ Mushrooms
  • Vegetable broth ➡️ Chicken or meat broth
  • Saffron ➡️ Coloring or turmeric
  • Grated Parmesan cheese ➡️ Grana Padano or cheese flakes
  • Fresh mozzarella balls ➡️ Feta cheese, gouda cheese balls or accompany them with cooked ham
