The quantities are variable and I have made about 7 cupcakes that I have cooked in one batch in my 5.5 L air fryer.

Ingredients for the recipe for tuna and vegetable patties in air fryer
Wheat flour - 4.2 oz
1/2 tsp baking powder
White wine - 100ml
1 onion
1/2 Zucchini
2 cans of Tuna
1 Carrot
1 egg
2 egg whites
Grated Grana Padano cheese - 1.4 oz
Salt
1/2 tsp ground pepper
Olive oil
Preparation in airfryer
Preparation time: 10 minutes
Cooking time: 15 minutes
Heat a frying pan over medium heat with a splash of olive oil.
Peel the carrot, zucchini and onion and cut into large pieces
We pass all the vegetables through the mincer (I use the Bosch mincer that works very well) or we cut it into very small pieces with a knife
Poach the vegetables in the pan with a pinch of salt for about 6 minutes
Add the wine and let the alcohol evaporate.
Add the flour and baking powder and mix well
Transfer the mixture to a large bowl and add the cans of drained tuna (if they are in olive oil, it does not matter if a little liquid falls out)
In a separate small bowl, beat the egg and egg whites and then add it to the bowl.
Add the salt, black pepper and cheese and finish mixing and integrating everything
In a cupcake mold, spread a little oil and pour the mixture without reaching the top.
We cook in the airfryer at 180 ยบC for 15 minutes
Remove, unmold and place on a plate

Tips for a good recipe for tuna and vegetable patties in a airfryer
If you have a Thermomix or a food processor, you can chop and cook the vegetables right there in less time and with less effort.
For this type of cupcakes, I recommend chopping with a good food processor rather than a knife (you can even leave the skin of the carrot and zucchini)
It is important to let the alcohol in the wine evaporate well (raising the heat in the pan)
When you add the flour and yeast lower the temperature or turn off the heat and leave with the residual heat
I recommend adding a splash of a can of tuna but only if it is tuna in olive oil
It is better to beat the whites and the egg separately to make it easier to mix
You can add more spices or change the ones that are already there to suit your personal taste.
Don't fill the mold all the way to the top. calculate more or less to free a finger (remember that carrying yeast swells and we don't want it all to come out)
