Recipe for vegetarian meatballs in a airfryer

These vegetarian meatballs are delicious and you will love them (to be vegan you have to substitute the egg).

In this case I have not accompanied them with sauce because I like them by themselves but you can make them in sauce.

I have cooked everything in my 5.5L Innsky air fryer.

Ingredients for the recipe for vegetarian meatballs in an air fryer

  • Textured soy - 8.8 oz
  • Turnip greens - 17.6 oz
  • 1 onion
  • 2 tsp garlic powder
  • 1 tsp black pepper
  • 1 tsp parsley
  • 3 Eggs
  • 2 tbsp of wheat flour
  • Olive oil
  • Salt

Preparation in airfryer

Preparation time: 5 minutes

Cooking time: 30 minutes

  1. In a large bowl add the soybeans and a large amount of water to hydrate
  2. Let stand 20 minutes and we drain well
  3. Add all the spices, a pinch of salt and mix well
  4. In a medium saucepan, boil water and cook the turnip greens.
  5. We change the water and continue cooking
  6. Drain well with a strainer and a cloth if necessary
  7. Chop the turnip tops and reserve
  8. In a skillet over medium heat, heat olive oil.
  9. Peel and chop the onion into small cubes
  10. Add the onion, a pinch of salt and sauté
  11. Let cook 5 minutes
  12. Add the textured soybeans, the turnip greens and turn off the heat but do not remove
  13. When it has cooled add the eggs, the flour and make the meatballs
  14. Place parchment paper for air fryer in the basket and the balls on top with a little separation and without piling up
  15. We cook in the airfryer at 200 ºC for 8 minutes
  16. Halfway through the time we turn or remove

  • The soybeans have to be hydrated in a large bowl since they double in size
  • You can add this recipe for Spanish sauce in a airfryer on top
  • The turnip tops are cooked in two waters and can take about 15-20 minutes
  • Both soybeans and turnip tops can be drained with a cloth to release all the water
  • Let the onion cook as much as possible but without burning
  • The flour is indicative, add more until you can handle the dough

Substitution of ingredients

  • Grelos ➡️ Spinach or chard
  • Wheat flour ➡️ Whole wheat flour, rice flour or oatmeal
  • Spices ➡️ You can substitute or add the ones you like the most
